Instructions
Grate the lime zest for the cheesecake. Squeeze the juice from the flesh. In a saucepan, melt the unsalted butter without bringing it to a boil. Add the lime zest, mix, and immediately remove from heat.
Combine the breadcrumbs, 2 tsp of sugar, melted butter with lime zest. You should get a fairly pliable mixture that will serve as the base for the cheesecake.
Spread the resulting mixture in a 1 cm layer in a 24 cm diameter springform pan. Bake in a preheated oven at 180°C (356°F) for 10 minutes. The lime cheesecake base is ready.
Beat the cream cheese with 1 cup of heavy cream and the eggs. While continuing to beat, add 1 cup of sugar, lime juice, and flour. Pour the mixture into the pan, level the surface, and return to the oven for 35–40 minutes. Let it cool completely on a wire rack.
For the lime cheesecake topping, whip the remaining heavy cream with sugar until thick. Spread it evenly over the cake, cover, and refrigerate for at least 4 hours.
Peel the remaining lime, remove the flesh from the membranes. Mix the desiccated coconut with sugar. Roll the lime flesh in this mixture and place it on top of the cheesecake. Serve and enjoy!
Useful Tip
To enhance the lime zest’s aroma for the cheesecake, rub it with a little fine sugar before combining it with melted butter.
By the Way
If you want to reduce the calorie content of your lime cheesecake, skip the whipped cream topping. Leave the surface clean and decorate with finely grated lime zest just before serving.
