INGREDIENTS:
- 25g gelatin
- 160g Invert syrup
- 400g sugar
- 200ml water
- 0.25 tsp salt
- 0.5 cup powdered sugar
- 0.5 cup cornstarch
INSTRUCTIONS:
Soak the gelatin in water and let it expand.
In a saucepan, mix the invert syrup, sugar, and water.
Heat the saucepan over medium heat and stir until the sugar dissolves.
Once the mixture boils, reduce the heat to a minimum and cook the syrup for 8 minutes.
Melt the gelatin in the microwave or in a double boiler. Do not let it boil.
Beat the gelatin on low speed for about a minute.
While continuing to beat, pour the hot syrup into the gelatin in a slow stream.
Gradually increase the speed to the maximum and beat the mixture for about 10-15 minutes, or until it becomes white, thick, and sticky.
Line a baking pan with parchment paper and grease with vegetable oil.
Pour the marshmallow mixture into the prepared pan and let it set for about 6 hours.
Mix the powdered sugar and cornstarch. Sprinkle some of the mixture onto a work surface.
Turn the marshmallow mixture out of the pan onto the work surface and remove the parchment paper.
Sprinkle the marshmallow mixture with the powdered sugar and cornstarch mixture and cut into cubes.
Roll each cube in the powdered sugar and cornstarch mixture.
