Sichuan-Style Chicken

Ingredients (for 6 servings):

  • 1.5 kg (3.3 lb) chicken
  • 1 tsp sesame oil
  • 150 g (5.3 oz) sugar
  • 1 cup soy sauce
  • 1 tsp vegetable oil
  • 1 cup rice wine or dry sherry
  • 2 cinnamon sticks
  • 1 strip of orange zest
  • 5 cm (2 inch) fresh ginger root
  • 3 garlic cloves
  • 1 star anise
  • 1.5 tsp ground chili pepper

Cooking Instructions:

Prepare the Marinade:

Peel and finely chop the ginger and garlic. In a saucepan, mix soy sauce, rice wine, sugar, ginger, garlic, sesame oil, and a pinch of ground chili pepper. Add cinnamon sticks, star anise, and orange zest. Bring to a boil, then add 400 ml (13.53 fl oz) of water and bring to a boil again. Reduce the heat and simmer for 15 minutes.

 

Marinate the Chicken:

Rinse the chicken and place it in the marinade breast-side down. Bring to a boil again, then reduce to medium heat and cook covered for 20 minutes. Flip the chicken and cook for an additional 10 minutes. Turn off the heat and let the chicken cool in the broth. Transfer the chicken to a rack and let it dry.

Roast the Chicken:

Mix vegetable oil with the remaining ground chili pepper and brush the chicken with the mixture. Place the chicken on a baking sheet and roast in a preheated oven at 220°C (428°F) for 25 minutes.
