Ingredients (Serves 10):

  • Mandarins: 500g (1.1 lbs)
  • All-purpose flour: 500g (17.6 oz)
  • Fresh yeast: 30g (1 oz)
  • Milk: 750ml (3.2 cups)
  • Whipped cream: 100ml (3.4 fl oz)
  • Eggs: 2
  • Sugar: 120g (4.2 oz)
  • Brown sugar: 1 tbsp (15g)
  • Vanilla sugar: 1 tsp (5g)
  • Vegetable oil: 4 tbsp (60ml)
  • Ground almonds: 1 tbsp (15g)
  • Cornstarch: 40g (1.4 oz)
  • Salt: a pinch

Instructions:

Prepare the Dough Starter: Sift half of the flour into a bowl, making a mound with a well in the center. Pour 250ml (1 cup) of warm milk into the well, add the crumbled yeast, and 1 tsp of sugar. Mix thoroughly and let it sit in a warm place for 25–30 minutes.

Make the Dough: Add the remaining sifted flour, 2 tbsp of sugar, a pinch of salt, vanilla sugar, eggs, and vegetable oil to the starter. Knead until smooth. Let the dough rise in a warm place for 1.5–2 hours.

Prepare the Filling: In 100ml (3.4 fl oz) of cold milk, dissolve the cornstarch. Pour the remaining milk into a saucepan, add the rest of the sugar, and bring to a boil. Gradually add the milk-cornstarch mixture, stirring constantly until thickened. Remove from heat and let it cool.

Roll Out the Dough: On a floured surface, roll out the dough into an oval shape. Place the dough in a greased oval baking dish.
