Italian Meat Polpette

Ingredients (Serves 6):

  • Salt: to taste
  • Basil sprigs: 3
  • Boiled potatoes: 2 medium
  • Vegetable oil: 2 tbsp (30ml)
  • Breadcrumbs: 2 tbsp (15g)
  • Minced garlic: 4 cloves
  • Boiled beef: 500g (18 oz)
  • Ricotta cheese: 150g (5.3 oz)
  • Eggs: 2 large

Instructions:

Prepare the Potatoes: Boil the potatoes in their skins until tender, about 20 minutes. Peel them while hot and mash them into a coarse puree.

Prep the Basil and Garlic: Strip the basil leaves from the stems and chop finely. Peel and mince the garlic.
