Ingredients (Serves 2):
- Egg noodles: 300g (10.5 oz)
- Eggs: 3
- Medium bunch of green onions or chives
- Raw sesame seeds: 2 tbsp (16g)
- Soy sauce: 2 tbsp (30ml)
- Rice vinegar or white wine vinegar: 1 tsp (5ml)
- Vegetable oil
- Dark sesame oil
- Freshly ground black pepper
- Salt
Instructions:
Cook the Noodles:
Boil the noodles in a large pot of salted water according to the package instructions. Drain, rinse with cold water, and let them dry.
Make the Omelette:
In a bowl, beat the eggs with 2 tbsp (30ml) of room temperature water, soy sauce, and rice vinegar.
Heat a little vegetable oil in a large non-stick skillet and pour in the egg mixture. Cook until the eggs are fully set, forming a thin omelette.
Prepare the Omelette:
Transfer the omelette to a greased cutting board and let it cool slightly. Cut the omelette into three parts, then slice into thin strips.
Prepare the Green Onions:
Thinly slice the white parts of the green onions. Cut the green parts diagonally into pieces about 2 cm (0.8 inches) long.
Stir-Fry:
Heat 1 tbsp (15ml) of vegetable oil in a wok or the same skillet used for the omelette. Add all the green onions and 1 tbsp (8g) of sesame seeds, lightly salt, and stir-fry for 1 minute.
Add the noodles and omelette strips, season with black pepper, and drizzle with dark sesame oil. Stir-fry for another 1-2 minutes until heated through.
