Ingredients for 6 Servings:
- Cauliflower: 1 kg (2.2 lbs)
- Eggs: 2
- Dill: 2 sprigs
- Parsley: 2 sprigs
- Flour: 80 g (2.8 oz)
- Vegetable Oil: 3-6 tbsp
- Salt: To taste
Preparation:
Prepare the Cauliflower: Break the cauliflower head into florets and place them in a large colander. Rinse under cold running water and transfer to a pot. Fill the pot with salted water and let the cauliflower soak for 30 minutes to remove any insects (they will float to the surface). Drain and rinse again under running water.
Cook the Cauliflower: Place the cauliflower in a pot, cover with hot water, and add salt. Bring to a boil over high heat. Reduce to medium heat and cook for 6 minutes. Drain the cauliflower.
Chop and Mix: Finely chop the cooked cauliflower and transfer to a bowl. Lightly beat the eggs with a whisk and add to the cauliflower. Add the flour and mix well.
Add Herbs: Wash and dry the dill and parsley, then finely chop. Add the herbs to the cauliflower mixture and stir to combine. Taste and add more salt if necessary. You can also add some pepper if you like.
Fry the Patties: Heat vegetable oil in a large skillet (at least 24 cm/9.5 inches in diameter). Scoop small portions of the cauliflower mixture into the skillet, spacing them apart. Fry the patties until golden brown on both sides (about 4 minutes per side). Add more oil to the skillet if needed.
