Creamy Holiday Spinach Bake

Ingredients for Creamy Holiday Spinach Bake

  • 6 Tbsp (85 g) butter

  • 8 oz (225 g) white American cheese

  • 6 eggs, beaten

  • 6 Tbsp (45 g) flour

  • 4 cups (960 g) small curd cottage cheese

  • 3 packages frozen spinach, defrosted (about 30 oz / 850 g total)

How to Make Creamy Holiday Spinach Bake

  1. Preheat oven to 350°F (175°C). Cut the butter and American cheese into 1/4-inch (0.6-centimeter) cubes and set aside.

  2. In a large mixing bowl, add the beaten eggs. Stir in the flour, cottage cheese, butter, and cubed American cheese. You may add a pinch of salt and pepper, but the cheese already provides a nice seasoning. Squeeze as much moisture as possible from the defrosted spinach, then fold it into the mixture until well combined.

  3. Transfer the mixture into a greased ovenproof dish (a large round Pyrex bowl works perfectly). Bake for 1 hour, or until set and golden on top. Serve hot.
