For the dressing:
- Garlic: 1 clove
- Olive oil: 4 tbsp
- Sugar: 1 tsp
- Whole grain mustard: 2 tsp
- White wine vinegar: 2 tbsp
Instructions
Step 1
Peel and mince the garlic. In a bowl, mix garlic with mustard, sugar, vinegar, and olive oil. Season with salt and pepper to taste. Cover and let sit for 15 minutes.
Step 2
Wash and boil the potatoes in their skins until tender. Hard boil the eggs. Rinse the green beans, place them in a colander, and blanch in boiling water for 6 minutes, then immediately transfer to a bowl of ice water to cool; drain well. Drain the canned white beans. Slice the olives into rings.
Step 3
Drain the canned tuna and transfer it to a plate, gently pressing out any excess liquid. Flake the tuna into large chunks with a fork. Cool and peel the hard-boiled eggs.
Step 4
Separate the lettuce leaves, wash, and dry thoroughly using paper towels. Line the bottom of a large serving platter or salad bowl with the lettuce leaves. Drizzle 2 tablespoons of the dressing over the lettuce.
Step 5
Cut the potatoes and eggs into large wedges. Wash and dry the cherry tomatoes, then halve them. Arrange the potatoes, eggs, and tomatoes around the edges of the platter or bowl.
Step 6
Mix the white and green beans with the olives and place them in the center of the salad. Top with chunks of tuna. Drizzle the remaining dressing over the entire salad.
Helpful Tip
You can substitute the cherry tomatoes in the classic Niçoise salad with small regular tomatoes, such as plum or cocktail tomatoes, for a similar taste and texture.
Additional Information
If you have the time and means, prepare the tuna for the Niçoise salad yourself. It’s best simply baked in foil or seared in olive oil to your desired doneness for a fresh and flavorful addition to your salad.
