Ingredients for Chili Con Carne

  • 2 lb ground beef (900 g)
  • 2 Tbsp extra virgin olive oil (30 ml)
  • 2 cloves garlic, minced
  • 2 medium onions, diced (200 g)
  • 1 green bell pepper, diced (150 g)
  • 1 ½ tsp salt (8 g)
  • 2 Tbsp chili powder (30 g) (use hot chili powder if preferred)
  • 1 tsp ground cumin (5 g)
  • 1 tsp dried oregano (5 g)
  • ½ tsp ground cinnamon (2.5 g)
  • ⅛ tsp cayenne pepper (or to taste, 1 g)
  • 2 cans chopped tomatoes with liquid, 16 oz each (900 g total)
  • 3 beef bouillon cubes
  • 1 cup boiling water (240 ml)
  • 1 can dark kidney beans, 15–16 oz (425 g)

How to Make Chili Con Carne

Step 1: Brown the Beef

In a large pot or Dutch oven, cook the ground beef over medium heat until browned and fully cooked. Drain any excess fat and set the beef aside.

Step 2: Sauté the Aromatics

In the same pot, heat the olive oil over low heat. Add the minced garlic and diced onions, sautéing until the onions are soft and translucent.

Step 3: Add the Peppers and Spices

Stir in the diced green bell pepper along with the salt, chili powder, cumin, oregano, cinnamon, and cayenne pepper. Cook for about 2 minutes, stirring constantly to coat the vegetables in the spices and release their flavors.

Step 4: Combine with Tomatoes and Beef

Return the browned beef to the pot. Add the canned tomatoes with their liquid and stir to combine. Dissolve the bouillon cubes in the boiling water and pour the mixture into the pot. Cover and simmer on low heat for 1 hour, allowing the flavors to meld together.

Step 5: Add Kidney Beans

Stir in the drained kidney beans and continue simmering uncovered for an additional 30 minutes. Stir occasionally to prevent sticking.
