Carrot Roll with Cheese Filling

Ingredients:

  • 500 grams (1.1 pounds) carrots
  • Salt, to taste
  • 2 tablespoons (35 grams) refined vegetable oil
  • 30 grams (1.1 ounces) butter
  • Dill, to taste
  • 100 grams (3.5 ounces) green onions
  • 50 grams (1.8 ounces) amateur mayonnaise
  • 200 grams (7 ounces) processed cheese
  • 50 grams (1.8 ounces) hard cheese
  • 3 eggs
  • Ground black pepper, to taste

Instructions:

Peel and grate the carrots finely. Sauté them in a mixture of vegetable oil and butter with the lid on until soft, then drain any excess liquid. Finely chop the dill. Separate the egg yolks from the whites and add the yolks to the carrots. Season with salt, pepper, and chopped dill, then mix well.

Beat the chilled egg whites with a pinch of salt until stiff peaks form. Gently fold the beaten egg whites into the carrot mixture.

Pour the carrot mixture onto a parchment-lined baking sheet, spreading it evenly with a spoon. Ensure the layer of carrot mixture is not thinner than 0.5-0.7 cm (0.2-0.3 inches) to prevent the baked sponge from cracking when rolled. Bake for 15 minutes in an oven preheated to 180°C (356°F).

While the sponge is baking, prepare the filling. To make it easier to grate the processed cheese, freeze it for 30 minutes before cooking. Grate the hard and processed cheeses using a coarse grater. Wash and finely chop the green onions. Mix the grated cheeses, green onions, spices, and mayonnaise thoroughly. Adjust the amount of mayonnaise as needed, but ensure the filling is not dry.

Remove the baked sponge from the oven and leave it in the baking sheet for 5 minutes. Invert the sponge onto a plastic wrap and carefully peel off the parchment paper. Some sponge may stick to the paper, but it’s okay. You can scrape off any remaining sponge with a knife and place it on top of the roll before adding the filling. To prevent sticking, you can grease the parchment paper with butter.

Spread the filling evenly over the sponge. Using the plastic wrap, roll the sponge with the filling into a roll, taking it away from you. Wrap the roll in the same plastic wrap. Refrigerate the roll for some time to allow it to soak. It’s even better to leave it overnight.
