Blue Cheese Cream Puffs

Ingredients for 20 Servings:

For the Puffs:

  • 60 ml of water (60 ml / 1/4 cup)
  • A pinch of sugar
  • 40 grams of flour (40 g / 1/3 cup)
  • 25 grams of butter (25 g / 1.75 tbsp)
  • A pinch of salt
  • 2 egg yolks

For the Cream:

  • 1 cup of milk (1 cup / 240 ml)
  • 150 grams of blue cheese, preferably Roquefort (150 g / 5.3 oz)
  • 1 bunch of dill
  • Salt, to taste

Cooking Instructions:

Prepare the Puffs:

  1. In a saucepan, bring the water and butter to a boil.
  2. Sift in the flour and add a pinch of salt and sugar.
  3. Stir constantly until the dough begins to pull away from the sides of the pan.
  4. Remove from heat and continue stirring while adding the egg yolks one at a time.
  5. Transfer the dough to a piping bag and pipe small rounds onto a baking sheet lined with parchment paper, spacing them 4-5 cm (1.5-2 inches) apart.
  6. Bake in a preheated oven at 180°C (350°F) for 15 minutes.
  7. Cool the puffs on a wire rack.

  1. Finely chop the dill.
  2. In a bowl, blend together the milk, chopped dill, and blue cheese until smooth.
