Ingredients (for 4 servings):
- 250 g (9 oz) pork fillet
- 1 onion
- 1 carrot
- 1 sweet green pepper
- 250 g (9 oz) canned pineapple chunks
- 1/2 cup vegetable oil
- 4 tbsp all-purpose flour
- 1 tbsp cornstarch
- 1.5 tbsp baking powder
- 5 tbsp brown sugar
- 50 ml (1.7 fl oz) white wine vinegar
- 2 garlic cloves
- 4 tbsp tomato paste
- 180 ml (6 fl oz) pineapple juice
- 1.5 tbsp cornstarch
Cooking Instructions:
Prepare the Batter:
- In a bowl, mix cornstarch, all-purpose flour, and baking powder. Add 1 tbsp of vegetable oil and a little water to create a thick batter.
- Rinse and pat dry the pork. Cut it into 2 cm (0.79 inch) cubes. Remove the core from the green pepper and cut it into similar-sized pieces. Cut the onion and carrot into small dice. Crush the garlic cloves.
Fry the Pork:
- Heat vegetable oil in a wok over high heat. Dip the pork cubes into the batter and then into the hot oil. Fry for 4–5 minutes until golden brown. Remove with a slotted spoon and place on paper towels.
Make the Sauce:
- Drain the excess oil from the wok, leaving about 1 tbsp. Return the wok to the heat.
- Add the onion, green pepper, pineapple chunks, and carrot. Sauté for 1–2 minutes. Remove with a slotted spoon and set aside.
- In the same wok, combine brown sugar, cornstarch, white wine vinegar, garlic, tomato paste, and pineapple juice. Bring to a boil, stirring, and cook for 1 minute.
Combine and Serve:
- Add the fried pork and sautéed vegetables back to the wok. Heat for 1–2 minutes until everything is well-coated in the sauce.
