Asian-Style Sweet and Sour Pork with Pineapple

Ingredients (for 4 servings):

  • 250 g (9 oz) pork fillet
  • 1 onion
  • 1 carrot
  • 1 sweet green pepper
  • 250 g (9 oz) canned pineapple chunks
  • 1/2 cup vegetable oil
  • 4 tbsp all-purpose flour
  • 1 tbsp cornstarch
  • 1.5 tbsp baking powder
  • 5 tbsp brown sugar
  • 50 ml (1.7 fl oz) white wine vinegar
  • 2 garlic cloves
  • 4 tbsp tomato paste
  • 180 ml (6 fl oz) pineapple juice
  • 1.5 tbsp cornstarch

Cooking Instructions:

Prepare the Batter:

  1. In a bowl, mix cornstarch, all-purpose flour, and baking powder. Add 1 tbsp of vegetable oil and a little water to create a thick batter.
  2. Rinse and pat dry the pork. Cut it into 2 cm (0.79 inch) cubes. Remove the core from the green pepper and cut it into similar-sized pieces. Cut the onion and carrot into small dice. Crush the garlic cloves.

Fry the Pork:

  1. Heat vegetable oil in a wok over high heat. Dip the pork cubes into the batter and then into the hot oil. Fry for 4–5 minutes until golden brown. Remove with a slotted spoon and place on paper towels.

Make the Sauce:

  1. Drain the excess oil from the wok, leaving about 1 tbsp. Return the wok to the heat.
  2. Add the onion, green pepper, pineapple chunks, and carrot. Sauté for 1–2 minutes. Remove with a slotted spoon and set aside.
  3. In the same wok, combine brown sugar, cornstarch, white wine vinegar, garlic, tomato paste, and pineapple juice. Bring to a boil, stirring, and cook for 1 minute.

Combine and Serve:

  1. Add the fried pork and sautéed vegetables back to the wok. Heat for 1–2 minutes until everything is well-coated in the sauce.
