Ingredients:
- Potatoes – 10-11 medium-sized potatoes
- Milk – 1/4 cup (50 ml)
- Mushrooms (Champignons) – 3.5 oz (100g)
- Carrot – 1 piece
- Onion – 2-3 pieces
- Garlic – 2-3 cloves
- Egg – 1 large egg
- Sour cream – 2-3 tbsp (to taste)
- Salt – to taste
- Spices – to taste
- Greens – a bunch
Preparation:
To start, we need to peel the potatoes and boil them until tender. While the potatoes are cooking, peel and dice the onions. Grate the carrot using a medium grater, and press the garlic through a garlic press. Next, wash and clean the mushrooms, then chop them into small cubes. Fry the mushrooms, then add carrots, onions, spices, and garlic. Mix everything together and cook covered on low heat for about 10 minutes. Add the sour cream and continue simmering for another 10-15 minutes until fully cooked.
While the mushroom mixture is cooking, let’s prepare the mashed potatoes. Make mashed potatoes by adding milk, salt, and one egg yolk, then mash everything together until smooth. Grease a baking sheet with vegetable oil, or you can line it with parchment paper if desired. Create “nests” on the baking sheet with the mashed potatoes, making a deep hollow in the center. Fill the hollows with the prepared mushroom filling.
Place the baking sheet in a preheated to 360°F oven and bake for 20 minutes since all the ingredients are already almost cooked. Now, our wonderful dish is ready. Garnish it according to your taste preferences. Bon appétit!
