  • 3/4 cup sugar (150 g)

  • 1/2 cup butter, room temperature (115 g)

  • 2 large eggs

  • 2 tablespoons milk (30 ml)

  • 1 teaspoon vanilla extract (5 ml)

  • 3–4 ripe bananas (approx. 345–460 g), mashed

Peanut Butter Filling:

  • 1/2 cup peanut butter, smooth or chunky (125 g)

  • 1/2 cup cream cheese, room temperature (115 g)

  • 1 teaspoon vanilla extract (5 ml)

  • 1 cup confectioners’ sugar (120 g)

  • 1/2 package Cool Whip, 8 oz (115 g of 225 g tub), thawed


How to Make Fluffy Banana Muffins with Creamy Peanut Butter Filling

  1. Preheat oven to 350°F (175°C). In a bowl, sift together the flour, baking powder, baking soda, and salt; set aside.

  2. In a large mixing bowl, cream the butter. Add sugar, vanilla, eggs, and milk; beat until smooth.

  3. Mash the bananas in a separate bowl and mix them into the wet ingredients.
