Classic Chinese Fried Rice

Ingredients for 6 Servings

For the Fried Rice:

  • 2 cups cooked rice
  • 2 eggs
  • 1 red bell pepper
  • 2 cm (0.8 inches) fresh ginger root
  • 2–3 garlic cloves
  • 4 stalks green onion
  • 2 tbsp vegetable oil
  • Soy sauce for serving

For the Fluffy Rice:

  • 2 cups long-grain rice
  • 3 cups water
  • 1 tbsp vegetable oil
  • 1 tsp salt

Directions

1. Cooking the Fluffy Rice:

In a large pot (at least 2.5 liters or 2.6 quarts), heat the oil over medium heat. Add the rice and salt, stirring thoroughly.

Pour in 3 cups of boiling water, cover with a lid, and bring to a boil over high heat.

Cook on high heat for 3 minutes, then reduce the heat to low and cook for 10 minutes without lifting the lid.

Remove from heat, wrap the pot in a blanket, and let it sit for 15 minutes.

2. Preparing the Fried Rice:

Use fully cooled rice, preferably from the previous day. Dice the red bell pepper into very small cubes.

Peel and finely chop the ginger and garlic. Cut the green onions into 2 cm (0.8 inches) diagonal pieces.

In a wok or large skillet, heat the vegetable oil over high heat. Add the ginger, garlic, bell pepper, and green onions, and stir-fry for 1 minute.

Add the rice and mix thoroughly.

Crack the eggs into the rice and stir vigorously with chopsticks. After 1–2 minutes, the eggs should be set.
