Chocolate Pear Cake

Ingredients for 6 servings:

  • Sugar – 5.3 oz (150 g)
  • Eggs – 2
  • Juice of 1/2 lemon
  • Dark chocolate – 1.75 oz (50 g)
  • Strong brewed coffee – 1 tablespoon (15 ml)
  • Butter – 4.4 oz (125 g)
  • Powdered sugar – 2 tablespoons (15 g)
  • Mint – 6 sprigs
  • Flour – 4.4 oz (125 g)
  • Baking powder – 1/2 teaspoon (2.5 g)
  • Small pears – 6
  • Cocoa powder – 2 tablespoons (15 g)

Instructions:

Prepare the Pears:

Peel the pears, keeping the stems intact. Slice off the base of each pear (reserve it) and remove the cores.

Make the Batter:

Sift the flour and baking powder into a bowl and add the sugar. Beat the flour mixture with the butter until well combined.

Add the lightly beaten eggs and cocoa powder. Stir in the coffee and mix well.

Stuff the Pears:

Divide the chocolate into 6 equal pieces. Place one piece of chocolate inside each pear, then reattach the sliced base. To prevent the pears from browning, sprinkle them with lemon juice.

Prepare the Molds:

Preheat the oven to 350°F (180°C). Grease 6 heatproof ceramic molds with butter and place a circle of parchment paper at the bottom of each. Fill the molds with the batter.

Press one pear into the center of each mold filled with batter. The batter should be about 2 cm below the rim of the mold. Sprinkle the pears with the remaining sugar.

Bake the Cakes:

Bake in the preheated oven for 30 minutes. Remove and let stand for 5 minutes. Run a narrow knife between the cake and the mold, then let them rest for another 10 minutes.
