Ingredients (Serves 4):
- Brie or Camembert cheese: 2 wheels (250g each)
- Sugar: 50g (1/4 cup)
- Puff pastry: 500g (17.6 oz)
- Strawberries: 250g (9 oz)
- Egg: 1
Instructions:
Prepare the Strawberry Sauce:
Wash the strawberries and set aside 2 berries. Place the remaining strawberries in a saucepan with the sugar and 100ml (1/2 cup) of water. Bring to a boil, then remove from heat and let cool.
Transfer the strawberries and liquid to a blender and puree. Strain through a sieve to remove seeds.
Prepare the Pastry:
Roll out the puff pastry on a floured surface to a thin sheet.
Cut 2 circles the same diameter as the cheese wheels (use the lid from the cheese box for sizing) and 2 circles that are 4-5 cm (1.5-2 inches) larger.
Assemble the Cheese:
Make a small indentation in the center of each cheese wheel with the handle of a knife and press the reserved strawberries into the indentations.
Place the cheese wheels on the larger pastry circles. Lift the edges of the pastry up and fold around the cheese.
Cover with the smaller pastry circles, brush with lightly beaten egg, and place in a preheated oven at 200°C (390°F) for 20 minutes.
