Finnish Blueberry Pie

Ingredients for 8 Servings

  • Butter – 150 g (5.3 oz)
  • Egg – 1
  • Cream (9% fat) – 1/3 cup (80 ml)
  • Sugar – 300 g (1 1/2 cups)
  • Flour – 250 g (2 cups)
  • Fresh or frozen blueberries – 400 g (14 oz)
  • Cornstarch – 2 tbsp


Prepare the Dough:

Cream the butter with 200 g (1 cup) of sugar until smooth. Add the egg, then gradually mix in the cream and flour to form a dough.

Press the dough into a 24 cm (9.5 inch) baking dish. Cover with plastic wrap and refrigerate for 30 minutes.

Thaw the blueberries if frozen and pat them dry. Mix the blueberries with the remaining sugar and cornstarch.

Spread the blueberry mixture evenly over the chilled dough.
