SLOPPY JOE NACHOS
The best part about a sloppy joe is the leftovers that fall out of the bun. I love to scoop up the flavorful ground beef into a corn chip or tortilla chip. So, it made sense to simply make a pan of sloppy joe nachos to include all the fixings! This recipe calls for Fritos Scoops corn chips, but you could definitely use tortilla chip scoops as well. (In fact, choosing the right chips was quite the debate around here…)

Sloppy Joes: This recipe starts with the sloppy joe using ground beef. There is no need to buy a canned sloppy joe sauce once you see how easy this is to make. Using ingredients you probably already have on hand, it’s easy to whip this up! And, be sure to save it when you are serving sloppy joes on a bun!

Chips: As I stated above, there was a debate over which chips to use. Fritos Scoops corn chips was the winner. But, you could also use tortilla chip scoops. When choosing chips, look for a sturdy chip that won’t easily break under the weight of the ingredients.

Cheese: Sharp cheddar cheese was what I prefer on the nachos. You can absolutely use your favorite cheese or cheeses here!

Toppings: The toppings are optional. But, I prefer sour cream, green onions, tomatoes, and jalapeno peppers.

HOW TO MAKE SLOPPY JOES
This is a really simple. So, be sure to save it when you want to serve it on a bun. Get started by cooking the ground beef with the chopped onion. After the beef has been browned (no pink), drain the beef. After draining the beef, add the garlic powder, mustard, ketchup, brown sugar, and water to the skillet.

ASSEMBLING SLOPPY JOE NACHOS
Once the sloppy joe mixture has been made, it’s time to assemble the nachos and get them eaten! First, place a single layer of Fritos Scoops on a baking sheet. Top with shredded cheese. Then, place the Fritos and cheese in the oven set on broil. Broil for 2-3 minutes, or just enough time for the cheese to melt and bubble. (Watch carefully.)

After the cheese has melted, top the nachos with sour cream, green onions, tomatoes, and jalapeno peppers. I actually think the nachos are perfect with just the sloppy joe and cheese. But, add all the fixings you are craving! One suggestion is to put the toppings in small dishes on the side. People can pile on the ingredients they like and skip the ones they don’t.

Ingredients

Sloppy Joe

  • 1 pound ground beef
  • ¼ cup chopped onion
  • ½ teaspoon garlic powder
  • 1 teaspoon yellow mustard
  • ¾ cup ketchup
  • 1 tablespoon brown sugar
  • ½ cup water
  • salt and pepper, to taste

Nachos

  • 1 bag (9.25 ounces) Fritos Scoops corn chips
  • 2 cups sharp cheddar cheese, shredded
  • ¼ cup sour cream, optional for topping
  • 2-3 green onions, diced (optional)
  • 1 roma tomato, diced (optional)
  • 1 medium jalapeno pepper, diced (optional)

Instructions

Preheat oven to 400°F.

Sloppy Joes

In a medium skillet over medium heat, cook the ground beef and onions until the beef is no longer pink. Drain.

Stir in the garlic powder, mustard, ketchup, brown sugar, and water, mixing until combined. Add salt and pepper, to taste.

Assembly

Place a thin layer of Fritos Scoops on a baking sheet. Top Fritos with sloppy joe mixture and cheese.

Place baking sheet in the broiler for 2-3 minutes, or until cheese is melted and bubbly.

Top with sour cream, onions, tomatoes, and jalapenos. Serve immediately.
