For the Dough:
- 3 cups flour
- 0.5 tsp salt
- 1 tbsp vegetable oil
- 1 egg white
- 2 tbsp rice starch
- 120 g (4.2 oz) bamboo shoots
- Black pepper, to taste
For the Filling:
- 300 g (11 oz) peeled shrimp
- 200 g (7 oz) pork fillet
- 2 tbsp soy sauce
- 0.5 tbsp sesame oil (or vegetable oil)
- 0.5 tbsp sugar
Instructions
Prepare the Filling:
Pass the pork fillet through a meat grinder.
Place the shrimp in a blender and process until finely chopped.
Combine the ground pork and shrimp in a bowl.
Finely chop the bamboo shoots and add to the meat mixture.
Season with soy sauce, sesame oil, sugar, and pepper. Add the egg white and rice starch, mixing thoroughly.
Make the Dough:
Sift the flour into the bowl of a food processor.
Bring half a cup of water to a boil and pour into the flour, then add an additional quarter cup of water, salt, and oil.
Knead the dough in the processor until smooth. Let it rest for 10 minutes.
Divide the dough into three parts, covering two parts to prevent drying.
Roll out one part of the dough using a pasta machine attachment to a thin sheet.
Shape the Wontons:
Cut the dough into circles with a diameter of 5 cm (2 inches).
Place 1 tsp of filling in the center of each circle.
Gather the edges of the dough to form an open-topped pouch.
Place the wontons in the refrigerator to chill. Repeat with the remaining dough and filling.
