Chinese-Style Pork Stir-Fry with Green Onions

Ingredients (Serves 4):

  • Cooked rice, for serving
  • Pork shoulder (boneless): 500g (17.6 oz)
  • Medium bunch of thick green onion stems
  • Fresh ginger root: 2-3 cm (0.8-1.2 inches)
  • Garlic cloves: 2
  • Cornstarch: 1 tsp (5g)
  • Brown sugar: 1/2 tsp (2.5g)
  • Soy sauce
  • Salt
  • Dark sesame oil
  • Vegetable oil

Instructions:

Marinate the Pork:

Slice the pork into strips measuring 3x1x1 cm (1.2×0.4×0.4 inches). In a bowl, mix 3 tablespoons of soy sauce with brown sugar and cornstarch. Add the pork and mix well. Let it marinate for 15 minutes.

Prepare the Aromatics:

Peel the ginger and remove any dried parts. Slice the ginger into thin plates, then into thin strips, and finally chop finely.

Crush, peel, and finely chop the garlic. Slice the white part of the green onions into thin rings. Cut the green parts of the onions into pieces about 3 cm (1.2 inches) long, making diagonal cuts at a 40° angle.

Stir-Fry the Pork:

Heat vegetable oil in a wok or large skillet until very hot. Stir-fry the pork in batches until it forms a golden crust, adding more oil as necessary. Transfer the cooked pork to a plate lined with paper towels to drain excess oil.
